TFA pat\u0159\u00ed spolu s&nbsp;nasycen\u00fdmi mastn\u00fdmi\nkyselinami, p\u0159idan\u00fdmi cukry a sol\u00ed mezi hlavn\u00ed rizikov\u00e9 \u017eiviny. Rizikov\u00e9\n\u017eiviny, pokud jsou konzumov\u00e1ny v&nbsp;nadbytku, p\u0159isp\u00edvaj\u00ed k&nbsp;rozvoji\nneinfek\u010dn\u00edch onemocn\u011bn\u00ed hromadn\u00e9ho v\u00fdskytu, jako jsou kardiovaskul\u00e1rn\u00ed\nonemocn\u011bn\u00ed, diabetes 2. typu, hypertenze apod. Ze v\u0161ech 4 rizikov\u00fdch \u017eivin maj\u00ed\nTFA nejni\u017e\u0161\u00ed tolerovan\u00fd p\u0159\u00edjem. Nem\u011bli bychom jich konzumovat v\u00edce ne\u017e 2-2,5&nbsp;g\ndenn\u011b. N\u011bkter\u00e1 doporu\u010den\u00ed uv\u00e1d\u011bj\u00ed p\u0159\u00edjem co nejni\u017e\u0161\u00ed. \u010cetnost v\u00fdskytu informac\u00ed\no TFA v medi\u00edch a na internetov\u00fdch str\u00e1nk\u00e1ch se pon\u011bkud sn\u00ed\u017eila, ale st\u00e1le se\n(i v posledn\u00ed dob\u011b) objevuj\u00ed <a href=\"https:\/\/hygiena.szu.cz\/pdfs\/hyg\/2020\/04\/03.pdf\">\u010dl\u00e1nky<\/a>, \u017ee\njejich eliminace z potravin je jednou z&nbsp;priorit\nv&nbsp;oblasti\nve\u0159ejn\u00e9ho zdrav\u00ed. Na internetu rovn\u011b\u017e nejsou aktualizov\u00e1ny informace zab\u00fdvaj\u00edc\u00ed\nse touto problematikou. R\u016fzn\u00ed v\u00fd\u017eivov\u00ed poradci \u010dasto opisuj\u00ed n\u011bkter\u00e9 star\u0161\u00ed\ninformace, nejsou v&nbsp;obraze\no aktu\u00e1ln\u00edm d\u011bn\u00ed a \u010dasto ani neznaj\u00ed technologick\u00e9 souvislosti t\u00fdkaj\u00edc\u00ed se\nv\u00fdskytu <a href=\"https:\/\/www.margit.cz\/encyklopedie\/trans-mastne-kyseliny\/\">transmastn\u00fdch\nkyselin<\/a> v&nbsp;potravin\u00e1ch.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Odkud se TFA berou?<\/h4>\n\n\n\n<p>TFA vznikaj\u00ed v&nbsp;bachoru\nskotu a ovc\u00ed enzymov\u011b \u0159\u00edzenou hydrogenac\u00ed nebo v&nbsp;pr\u016fmyslov\u00fdch\ntechnologi\u00edch \u010d\u00e1ste\u010dn\u00fdm ztu\u017eov\u00e1n\u00edm tuku vod\u00edkem. TFA mohou vznikat i za vy\u0161\u0161\u00edch\nteplot, nap\u0159. p\u0159i rafinaci olej\u016f. TFA rovn\u011b\u017e putuj\u00ed potravn\u00edm \u0159et\u011bzcem.\nNap\u0159\u00edklad vep\u0159ov\u00e9 s\u00e1dlo v&nbsp;minulosti\nobsahovalo i n\u011bkolik procent TFA, pokud bylo prase krmeno odpadky z&nbsp;kuchyn\u011b,\nkde se va\u0159ilo za pou\u017eit\u00ed \u010d\u00e1ste\u010dn\u011b ztu\u017een\u00fdch tuk\u016f. Dal\u0161\u00edm p\u0159\u00edkladem m\u016f\u017ee b\u00fdt\nmate\u0159sk\u00e9 ml\u00e9ko. Pokud koj\u00edc\u00ed \u017eeny konzumuj\u00ed TFA, p\u0159ech\u00e1zej\u00ed tyto do mate\u0159sk\u00e9ho\nml\u00e9ka. \u010c\u00e1ste\u010dn\u011b ztu\u017een\u00e9 tuky lze pova\u017eovat z&nbsp;t\u011bchto zdroj\u016f za jedin\u00e9 nutri\u010dn\u011b\nv\u00fdznamn\u00e9. Zat\u00edmco ml\u00e9\u010dn\u00fd tuk nebo l\u016fj obsahuj\u00ed okolo 3&nbsp;% TFA,\nrafinovan\u00e9 oleje p\u0159i dodr\u017eov\u00e1n\u00ed z\u00e1sad spr\u00e1vn\u00e9 v\u00fdrobn\u00ed praxe pod 1&nbsp;% TFA a\n\u017eivo\u010di\u0161n\u00e9 tuky, v nich\u017e se TFA vyskytuj\u00ed v d\u016fsledku jejich p\u0159\u00edjmu stravou nebo\nkrmen\u00edm, rovn\u011b\u017e v&nbsp;\u0159\u00e1du\nn\u011bkolika procent, \u010d\u00e1ste\u010dn\u011b ztu\u017een\u00e9 tuky mohly obsahovat a\u017e 60&nbsp;% TFA. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Pro\u010d se tuky ztu\u017eovaly?<\/h4>\n\n\n\n<p>Ke ztu\u017eov\u00e1n\u00ed doch\u00e1zelo ze dvou\nhlavn\u00edch d\u016fvod\u016f dan\u00fdch po\u017eadavky praxe. Jeden d\u016fvod lze pova\u017eovat za vedlej\u0161\u00ed,\nvypl\u00fdvaj\u00edc\u00ed z&nbsp;v\u00fd\u017eivov\u00fdch\npoznatk\u016f. B\u011b\u017en\u00e9 oleje dostupn\u00e9 na trhu lze pou\u017e\u00edt v&nbsp;dom\u00e1cnosti\nk&nbsp;jednor\u00e1zov\u00e9mu\nsma\u017een\u00ed. \u0158epkov\u00fd olej m\u00e1 lep\u0161\u00ed tepelnou odolnost ne\u017e olej slune\u010dnicov\u00fd nebo\ns\u00f3jov\u00fd. Pro pr\u016fmyslov\u00e9, dlouhodob\u00e9 sma\u017een\u00ed nen\u00ed tepeln\u00e1 stabilita t\u011bchto olej\u016f\nobvykle dostate\u010dn\u00e1. \u010c\u00e1ste\u010dn\u011b ztu\u017een\u00e9 tuky byly odoln\u011bj\u0161\u00ed, a nav\u00edc se b\u011b\u017en\u011b nevyskytovaly\njin\u00e9 alternativy. Dnes se k&nbsp;tomuto\n\u00fa\u010delu vyu\u017e\u00edvaj\u00ed slune\u010dnicov\u00fd olej s&nbsp;vysok\u00fdm\nobsahem kyseliny olejov\u00e9 nebo oleinov\u00e9 frakce palmov\u00e9ho oleje. Ty jsou kapaln\u00e9,\ndob\u0159e se s&nbsp;nimi\nmanipuluje a snesou vysokou a dlouhodobou tepelnou z\u00e1t\u011b\u017e. Druh\u00fdm d\u016fvodem\nztu\u017eov\u00e1n\u00ed jsou technologick\u00e9 po\u017eadavky na texturu potravin. \u010c\u00e1ste\u010dn\u011b ztu\u017een\u00e9\ntuky bylo mo\u017en\u00e9 vyr\u00e1b\u011bt takzvan\u011b na m\u00edru, aby vyhovovaly \u00fa\u010delu pou\u017eit\u00ed. Jin\u00e9\npo\u017eadavky jsou na polevy, jin\u00e9 na n\u00e1pl\u0148ov\u00e9 tuky nebo na tuky na pe\u010den\u00ed. Dnes\njsou k&nbsp;dispozici\nk&nbsp;t\u011bmto\n\u00fa\u010del\u016fm r\u016fzn\u00e9 tropick\u00e9 tuky, hlavn\u011b palmov\u00fd \u010di jeho frakce, p\u0159\u00edpadn\u011b tuky\np\u0159ipraven\u00e9 z&nbsp;t\u011bchto\ntuk\u016f p\u0159eesterifikac\u00ed. A\u017e do 80t\u00fdch let minul\u00e9ho stolet\u00ed chyb\u011bly informace o\nne\u017e\u00e1douc\u00edch \u00fa\u010dinc\u00edch TFA na zdrav\u00ed. Z&nbsp;toho\npohledu nebyl d\u016fvod, pro\u010d bychom se m\u011bli \u010d\u00e1ste\u010dn\u011b ztu\u017een\u00fdm tuk\u016fm vyh\u00fdbat.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Spot\u0159ebitel\u016fm se podsouv\u00e1 \u0159ada\nnesmysl\u016f<\/h4>\n\n\n\n<p>Spot\u0159ebitel, kter\u00fd \u010dte <a href=\"https:\/\/www.margit.cz\/encyklopedie\/trans-mastne-kyseliny\/\">informace<\/a>, \u017ee\nv\u00fdsledkem hydrogenace je tuh\u00fd a snadno rozt\u00edrateln\u00fd v\u00fdrobek, \u017ee v\u00fdchoz\u00ed\nsurovinou jsou nej\u010dast\u011bji&nbsp;levn\u00e9 rostlinn\u00e9 oleje,\nnap\u0159\u00edklad slune\u010dnicov\u00fd, s\u00f3jov\u00fd \u010di \u0159epkov\u00fd, p\u0159\u00edpadn\u011b, \u017ee nejlevn\u011bj\u0161\u00ed margar\u00edny\ns&nbsp;trans tuky z&nbsp;trhu\nnezmizely a pou\u017e\u00edvaj\u00ed se p\u0159i p\u0159\u00edprav\u011b polotovar\u016f (v\u010detn\u011b mnoha potravin, je\u017e\njsou \u010dasto vyd\u00e1v\u00e1ny za zdrav\u00e9), fast food potravin a p\u0159i va\u0159en\u00ed v&nbsp;mnoha\nb\u011b\u017en\u00fdch restaurac\u00edch, je zmaten a v&nbsp;problematice\nse m\u016f\u017ee jen t\u011b\u017eko orientovat. \u0158ada autor\u016f nevn\u00edm\u00e1 rozd\u00edly mezi ztu\u017een\u00fdmi tuky a\nmargariny a p\u00ed\u0161ou \u010dl\u00e1nky, ani\u017e by k&nbsp;nim\nm\u011bli odpov\u00eddaj\u00edc\u00ed znalosti. <\/p>\n\n\n\n<p>Na druhou stranu je pravda, \u017ee a\u017e\ndo ned\u00e1vn\u00e9 doby jsme se na na\u0161em trhu setk\u00e1vali s&nbsp;potravinami s&nbsp;vysok\u00fdm\npod\u00edlem TFA p\u0159i v\u00fdznamn\u00e9m obsahu tuku. V\u00fdrobky p\u016fvodem\nze z\u00e1padn\u00ed Evropy vysok\u00fd pod\u00edl TFA neobsahovaly. Je to trochu jin\u00fd \u00fahel pohledu\nna \u010dasto medializovanou dvoj\u00ed kvalitu potravin. Konzumac\u00ed jednoho v\u00fdrobku z\nv\u00fd\u0161e uveden\u00fdch potravin jsme mohli p\u0159ekro\u010dit denn\u00ed tolerovan\u00fd p\u0159\u00edjem pro TFA.\nNutno v\u0161ak doplnit, \u017ee se takto vysok\u00fd obsah TFA objevoval ve v\u00fdrobc\u00edch\nojedin\u011ble a do p\u0159\u00edjmu TFA v&nbsp;r\u00e1mci cel\u00e9 populace se projevoval jen men\u0161\u00ed m\u011brou.\nNa druhou stranu se tyto v\u00fdrobky pohybovaly v&nbsp;ni\u017e\u0161\u00ed cenov\u00e9 hladin\u011b, co\u017e mohlo sv\u00e1d\u011bt n\u011bkter\u00e9\nn\u00edzkop\u0159\u00edjmov\u00e9 skupiny obyvatel k&nbsp;opakovan\u00fdm n\u00e1kup\u016fm.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Evropsk\u00e9 \u0159e\u0161en\u00ed probl\u00e9mu<\/h4>\n\n\n\n<p>Jednotliv\u00e9 st\u00e1ty v&nbsp;r\u00e1mci Evropsk\u00e9 unie se za\u010daly br\u00e1nit po sv\u00e9m a\nvyd\u00e1vat legislativn\u00ed opat\u0159en\u00ed na lok\u00e1ln\u00ed \u00farovni. D\u00e1nsko bylo v&nbsp;tomto sm\u011bru prvn\u00ed.\nOpat\u0159en\u00ed v&nbsp;jednotliv\u00fdch st\u00e1tech se parametricky li\u0161ila a nar\u00e1\u017eela na princip voln\u00e9ho\nob\u011bhu zbo\u017e\u00ed v&nbsp;r\u00e1mci EU. Proto se Evropsk\u00e1 komise po ur\u010dit\u00fdch diskus\u00edch rozhodla p\u0159ijmout\nceloevropsk\u00e9 \u0159e\u0161en\u00ed situace. V&nbsp;roce 2019 bylo zve\u0159ejn\u011bno Na\u0159\u00edzen\u00ed (EU) \u010d.\n2019\/649. Podle tohoto na\u0159\u00edzen\u00ed nesm\u00ed obsah TFA jin\u00fdch ne\u017e p\u0159irozen\u011b se\nvyskytuj\u00edc\u00edch v tuc\u00edch \u017eivo\u010di\u0161n\u00e9ho p\u016fvodu, v&nbsp;potravin\u00e1ch ur\u010den\u00fdch pro kone\u010dn\u00e9ho spot\u0159ebitele a\nv&nbsp;potravin\u00e1ch\nur\u010den\u00fdch pro maloobchod p\u0159ekro\u010dit 2&nbsp;g na 100&nbsp;g tuku. Pokud by n\u011bkter\u00e1 ze surovin pou\u017e\u00edvan\u00e1 ve\nv\u00fdrob\u011b potravin tento limit p\u0159ekra\u010dovala, mus\u00ed b\u00fdt odb\u011bratel\u00e9 v&nbsp;r\u00e1mci dodavatelsk\u00e9ho\n\u0159et\u011bzce o tom informov\u00e1ni, aby byli schopni zajistit po\u017eadavek na v\u00fdrobek na\n\u00farovni kone\u010dn\u00e9ho spot\u0159ebitele pouh\u00fdm propo\u010dtem z&nbsp;receptury bez nutnosti slo\u017eit\u00fdch rozbor\u016f. Po 21.\ndubnu 2021 ji\u017e nen\u00ed mo\u017en\u00e9 potraviny nevyhovuj\u00edc\u00ed po\u017eadavk\u016fm tohoto na\u0159\u00edzen\u00ed\nuv\u00e1d\u011bt na trh. D\u016fvodem, pro\u010d jsou z&nbsp;na\u0159\u00edzen\u00ed vyjmuty TFA \u017eivo\u010di\u0161n\u00e9ho p\u016fvodu, nen\u00ed\njejich vliv na zdrav\u00ed, ale skute\u010dnost, \u017ee na \u00farovni 2&nbsp;g TFA na 100&nbsp;g tuku nelze u ml\u00e9\u010dn\u00e9ho tuku po\u017eadavek na\u0159\u00edzen\u00ed\nrealizovat.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Probl\u00e9m s TFA v r\u00e1mci EU se zd\u00e1 b\u00fdt vy\u0159e\u0161en<\/h4>\n\n\n\n<p>V\u00fdrobc\u016fm potravin nezb\u00fdvalo nic jin\u00e9ho, ne\u017e se s danou situac\u00ed postupn\u011b\nvyrovn\u00e1vat. Ji\u017e ve st\u00e1diu legislativn\u00edch p\u0159\u00edprav nebo p\u0159echodn\u00e9ho obdob\u00ed\nNa\u0159\u00edzen\u00ed (EU) \u010d.&nbsp;2019\/649, kter\u00e9 nyn\u00ed skon\u010dilo, klesal pod\u00edl TFA v&nbsp;potravin\u00e1ch. V\u00fdrobci na\u0161li n\u00e1hradu nap\u0159. v&nbsp;tropick\u00fdch tuc\u00edch.\nPalmov\u00fd olej se hlavn\u00ed m\u011brou pod\u00edlel <a href=\"https:\/\/www.udrzitelnypalmovyolej.cz\/?p=856\">na redukci p\u0159\u00edjmu TFA<\/a> ve\nstrav\u011b. Bylo nutn\u00e9 ud\u011blat n\u011bkter\u00e9 zm\u011bny v technologii, ale na chuti v\u00fdrobk\u016f se\np\u0159\u00edli\u0161 neprojevily. D\u016fkazem zm\u011bn receptur je <a href=\"http:\/\/www.szu.cz\/uploads\/CZVP\/TFA_MM_final2.pdf\">studie St\u00e1tn\u00edho\nzdravotn\u00edho \u00fastavu<\/a>,\npodle kter\u00e9 jsme v roce 2017 v&nbsp;\u010cesk\u00e9 republice p\u0159ij\u00edmali nejv\u00edce TFA z&nbsp;m\u00e1sla, p\u0159\u00edjem ze\nztu\u017een\u00fdch tuk\u016f byl ji\u017e m\u00e9n\u011b v\u00fdznamn\u00fd. N\u011bkoho to mo\u017en\u00e1 p\u0159ekvap\u00ed. Kdo v\u0161ak v\u00fdvoj\nokolo TFA sleduje v\u00edce v detailu, tomu rozum\u00ed a koresponduje to se statistikami\nz jin\u00fdch evropsk\u00fdch zem\u00ed. V\u00fdvoj od t\u00e9 doby pokra\u010doval d\u00e1le. \u010c\u00e1ste\u010dn\u011b ztu\u017een\u00e9\ntuky p\u0159estaly b\u00fdt hlavn\u00edm zdrojem p\u0159\u00edjmu TFA a tato kategorie v&nbsp;sou\u010dasnosti v\npodstat\u011b p\u0159estala existovat. Legislativa EU sice postr\u00e1d\u00e1 jasnou definici, co\nje \u010d\u00e1ste\u010dn\u011b a co pln\u011b ztu\u017een\u00fd tuk, i kdy\u017e vy\u017eaduje uv\u00e1d\u011bt toto rozli\u0161en\u00ed ve\nslo\u017een\u00ed potravin. To je slabinou evropsk\u00e9 legislativy. \u010c\u00e1ste\u010dn\u011b ztu\u017een\u00fd tuk\nm\u00edv\u00e1 vy\u0161\u0161\u00ed pod\u00edl TFA ne\u017e 2&nbsp;g na 100&nbsp;g tuku.
