Je hor\u0161\u00ed ne\u017e v\u0161echny ostatn\u00ed&#8220;. \u010cl\u00e1nek se odkazuje na v\u011bdeckou publikaci singapursk\u00fdch v\u011bdc\u016f zve\u0159ejn\u011bnou v&nbsp;\u010dasopise <a href=\"https:\/\/academic.oup.com\/jn\/article\/145\/7\/1549\/4616780?login=true\">The Journal of Nutrition<\/a> v&nbsp;roce 2015.  <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Co\nbylo p\u0159edm\u011btem a v\u00fdsledkem t\u00e9to studie?<\/h4>\n\n\n\n<p>Jednalo\nse o metaanal\u00fdzu vych\u00e1zej\u00edc\u00ed z&nbsp;celkem 32 studi\u00ed a 30\nv\u011bdeck\u00fdch prac\u00ed. Probl\u00e9m je, \u017ee b\u011b\u017en\u00fd spot\u0159ebitel\nv&nbsp;evropsk\u00e9 strav\u011b pou\u017e\u00edv\u00e1 samotn\u00fd palmov\u00fd olej pouze\nokrajov\u011b. Na tekut\u00fd palmov\u00fd olej v&nbsp;maloobchod\u011b v&nbsp;podstat\u011b\nnenaraz\u00edte. M\u016f\u017eeme zam\u011bnit pokrmov\u00e9 tuky, z&nbsp;nich\u017e n\u011bkter\u00e9\njsou tvo\u0159eny stoprocentn\u00edm palmov\u00fdm tukem, za tepeln\u011b stabiln\u00ed\noleje na sma\u017een\u00ed. To se ale t\u00fdk\u00e1 jen mal\u00e9ho po\u010dtu lid\u00ed.  Nav\u00edc\nje d\u016fle\u017eit\u00fd prvek z\u00e1m\u011bny za oleje s&nbsp;ni\u017e\u0161\u00edm pod\u00edlem\nnasycen\u00fdch mastn\u00fdch kyselin.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Nemaj\u00ed\nto jednoduch\u00e9 ani v\u00fdrobci<\/h4>\n\n\n\n<p>Palmov\u00fd tuk se ve v\u011bt\u0161in\u011b potraviny pou\u017e\u00edv\u00e1 kv\u016fli pevn\u00e9 konzistenci, kde hraje roli strukturn\u00edho tuku, a nelze jej ve v\u011bt\u0161in\u011b p\u0159\u00edpad\u016f proto nahradit oleji s ni\u017e\u0161\u00edm pod\u00edlem nasycen\u00fdch mastn\u00fdch kyselin, kter\u00e9 jsou kapaln\u00e9. Z\u00e1m\u011bna za kapaln\u00e9 oleje je mo\u017en\u00e1 jen u n\u011bkter\u00fdch typ\u016f v\u00fdrobk\u016f. Nap\u0159\u00edklad jeden \u010desk\u00fd v\u00fdrobce m\u00fcsli zam\u011bnil palmov\u00fd olej za olej \u0159epkov\u00fd. U tohoto v\u00fdrobku v\u0161ak palmov\u00fd olej nehraje roli strukturn\u00edho tuku. Podobn\u011b je tomu i u pr\u016fmyslov\u00e9ho sma\u017een\u00ed. \u0158ada v\u00fdrobc\u016f ji\u017e nahradila palmov\u00fd olej v procesu speci\u00e1ln\u00edm slune\u010dnicov\u00fdm olejem s vysok\u00fdm obsahem kyseliny olejov\u00e9, kter\u00fd se vyzna\u010duje dobrou tepelnou stabilitou v\u016f\u010di oxidac\u00edm p\u0159i sma\u017een\u00ed. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Na\nco v\u0161ak\nweb\nAAzdrav\u00ed.cz zapomn\u011bl<\/h4>\n\n\n\n<p>Jedn\u00edm\nz&nbsp;dal\u0161\u00edch zji\u0161t\u011bn\u00ed\nsingapursk\u00fdch v\u011bdc\u016f je rovn\u011b\u017e skute\u010dnost, \u017ee pokud palmov\u00fd\nolej nahradily \u017eivo\u010di\u0161n\u00e9 tuky, k&nbsp;pozitivn\u00edm zm\u011bn\u00e1m\nv&nbsp;hladin\u011b krevn\u00edch lipid\u016f nedo\u0161lo.
